From his early days, Joe has always been interested in food. This interest was nurtured when he would visit his grandfather's Salumeria on 18 th Avenue in Brooklyn, New York. Typically Grandpa would offer him a sandwich and proceed to make him a foot-long hero loaded with all sorts of freshly cut meat and cheeses and seasoned with all the love Grandpa could squeeze in. Both of Joe’s Grandmas would also show their love around the family table on Sundays when they made dinner for the entire family. Food always meant family and love.

As a teenager, Joe worked in catering halls where he learned how to work in a professional kitchen and prepare food for large groups of people. Eventually he wound up working in the flight kitchen at Trans World Airlines in Jamaica, New York. During Joe’s 21 years at TWA he met and learned from chefs from around the world who prepared food from scratch for the airline's Royal Ambassador and First-Class customers. Joe practiced what he learned at home and at numerous social and church events feeding family and friends.

Every year at Thanksgiving and Christmastime Joe’s passion for making others feel happy and satisfied would be reinforced as he watched his Mom prepare food and bake cookies for family, friends and anyone else who happened to be fortunate enough to drop by for a visit. Food was always available as an offering of friendship and love. It was there at home that Joe was instilled with the belief that "Food is Love."
